TYPE: Young grappa, single-variety “Aglianico”
GRAPE VARIETY: Aglianico del Vulture from the hills of Venosa, whose pomace arrives at the distillery freshly drawn off and rich in must.
HARVEST TIME: Second ten days of October.
ALCOHOLIC CONTENT: 40%, “typical”
DISTILLATION: Distilled with a continuous and discontinuous bain-marie still,
favoring the cleanliness of the distillate, according to the Da Ponte Method
VISUAL SENSATIONS: Crystal clear
OLFACTORY SENSATIONS: Initially herbaceous bouquet with typical hints of small berries.
TASTE SENSATIONS: It is soft, warm and intriguing on the palate, with spicy final notes of liquorice and black pepper.
RECOMMENDED GLASS: tulip shaped
SERVING TEMPERATURE: It should be served at room temperature, excellent in summer at 8-10°C.
