Production area: North-eastern part of the Province of Potenza delimited by the production specification which includes the territory of n. 15 Municipalities, especially in the Municipality of Venosa Città di Orazio.
Harvest period: From 1st to 10th November (overripeness of the grapes on the vine).
Harvest method: Selection of the grapes, harvested by hand, in 12 – 15 kg crates in the early hours of the morning and immediate transport of the same to the cellar.
Vinification: Vinification in small fermenters and skin maceration at a controlled temperature of 23° to 26° C. for approximately 15 days, completion of the alcoholic and malolactic fermentation in stainless steel tanks.
Aging: In small French oak barrels of 225 liters each. for 18 – 24 months and in bottle for at least 12 months.
Bottling: Filtration and cold bottling.
Organoleptic characteristics and technical comment: Well-structured and elegant wine with: intense ruby red color with light garnet reflections. Vinous and personal bouquet with delicate aroma of dried violet, currant, ripe black fruit (blueberry, blackberry), liquorice. Hints of incense on the finish.
On the palate, a velvety tannic texture in a full-bodied and austere sip, but very fine and elegant. Good freshness.
Gastronomic pairing and serving temperature: It is the classic aging wine suitable for roast red meats, game, strong dishes and mature hard cheeses. It is suggested to uncork at least an hour before and serve at 18° – 20°C.
